Since I was in high school, I have worked in the food service industry.  I started as a dishwasher/busboy and since then have worked the line, managed staff, prepped and done just about every job possible in the kitchen.  I have worked in several different establishments for all sorts of different chefs and cooks.  I have paid attention in great detail to what is good and works as well as what doesn’t work so well.

I have worked concessions for many major concerts in the area as well as behind the scenes in the kitchen during these events helping to organize the staff and make sure things go smooth for people who aren’t as experienced.

I volunteered and helped cater for the hit TV show “Extreme Makeover Home Edition” in Geneva a couple years ago.  While going to school in Buffalo I worked with the Executive Chef to serve upscale dinners to the President of the College for his personal parties at the President’s house.

A few summers ago I joined up with Tim to start catering on our own and help him expand his BBQ sauce brand 8-10-80.  Since then we are constantly looking into new plans and ideas.  In the spring of 2012, Tim has purchased a concession trailer to start doing road side vending.

We have donated to the Chef’s Unite Luncheon to support the local House of Good Shepherd organization as well as donated to the Root Farm, a local charity. We also participated in a fundraiser for the Village of Oneida Castle as they are working on a Veterans Memorial for their park. I help organize and cook for the Vernon Legion for their parades, Breakfast fundraisers, and other events at the post.
